Soldaat is the surprisingly refreshing liquid translation of a 40 year old Grenache Noir vine. Typically Grenache vines tend to overproduce when lovingly tended or young, but with age and/or unforgiving growing conditions, the vine reduces its fruit load and offers up grapes with the sort of refined depth only age or hardship can impart.
Fermented on the skins for 30 days, pressed, left on lees for 8 months, racked to another concrete tank for a further 4 months to settle clean.
Look out for cherries and red berries at the forefront with a lingering cinnamon, allspice and salty finish. Be patient for much like the story of the mature vine, Soldaat is best enjoyed with time - 5 – 8 years to be specific.
